Pesto di pomodori secchi e mandorle

Dried tomato pesto and almond is a quick and tasty pesto to accompany your pasta dishes.

Its intense flavour and creamy texture will envelop your pasta and your palate!

Turn on the pasta water, open the pantry and get the ingredients: preparing this pesto will be very easy.

Ingredients for 2 people:

-10 dried tomatoes in oil

-A dozen peeled almonds

-A few leaves of fresh basil

-100 g cow's ricotta cheese

-Lemon peel

-EVO oil 

Procedure

Choose the format you prefer, bring the water to the boil and cook the pasta.

Now prepare the pesto:

Put the dried tomatoes in the blender glass together with the almonds, ricotta, basil and a generous grating of lemon zest. Blend everything adding, if necessary, a little cooking water from the pasta.

Once the pesto is ready, pour it into a high-sided frying pan.

Drain the pasta directly into the pan and stir, adding a ladle of cooking water to make it nice and creamy (over a low flame).

Serve and finish with a drizzle of evo oil.
