Shakshuka alla calabrese - Valle del Crati

Do you know Shakshuka?
It is a typical recipe from the Maghreb and Middle Eastern cuisine based on eggs and tomatoes where the scarpetta with bread is a must.
It is somewhat reminiscent of our eggs in purgatory but with a decidedly spicy note, given by the use of harissa sauce, a spicy African sauce made with chilli, coriander, caraway and paprika that can be replaced by an excellent Calabrian chilli. 

The version we propose here, prepared with our Pomodorossa sauce, is an excellent combination of African and Calabrian cuisine.
A tasty dish that can be prepared in less than half an hour, perfect for a quick lunch or dinner. 

Ingredients for 3 persons:
- evo oil
- half onion
- harissa sauce to taste
- 300 g of red tomatoes
- 2 peeled tomatoes
- 3 eggs
- hot paprika to taste
- salt to taste 

Method
In a frying pan, pour a little oil, the chopped onion, a teaspoon of hot paprika and a teaspoon of harissa sauce (alternatively hot chilli from Calabria). 

Fry and then add a couple of peeled tomatoes and about 300 g of red tomatoes. Add the eggs, season with salt and cover with a lid. Cook for about 2 minutes. 

Then serve with some bread to accompany.
